Cookies with pieces of white chocolate and pecan nuts

Hello again fellow readers. Today i will write down a delicious recipe for pecan nut cookies with some white chocolate inside.

Ingredients:

200gr flour
1/2 tea spoon baking soda
1/4 tea spoon salt
125gr softened butter
150gr raw cane sugar
1 tea spoon vanilla essence
1large egg
125gr white chocolate, broken in large pieces 50gr pecan nuts, nicely grounded
20gr half pecan nut for decoration



How to do the recipe:


1. 
Preheat oven to 180C if it is a gas one set it on 4.
2.  Butter up one shallow baking pan.
3.  Mix in average size bowl the flour, slat and baking soda.
4.  Put in a big bowl the sugar and butter. Mix with a mixer set on high speed until the mixture is nice and fluffy.
5.  Ad the vanilla essence and mix again just so the ingredients can mix together.
6.  Set the mixer on low speed and add the flour mix, chocolate and the grounded pecan nuts to the large bowl.
7.  From the dough in ball with the size of a walnut and arrange them in the baking pan. Keep the cookies separated by 5cm so they don't stuck together on baking. Now take the half pecan nuts and slightly press them on top of the cookies.
8.  Bake for 10-12 minutes or until the cookies get golden.
9. After you take the cookies out of the oven leave them to cool down for 5 minutes and then take them out of the baking pan and arrange them on a metal grill so they can cool down completely.

You should get around 20 cookies.
Time to make the recipe is around 20 minutes.
Baking is 10-12 minutes.

Cacao bretzel ( pretzel ) with glaze

Hello fellow cooking enthusiasts today i am gonna share a cacao pretzel with glaze recipe, taken again from my book of recipes,picture is again taken from the net, but its very similar to the one in the book. 
Okey so lets start.

Ingredients:


300gr flour
2 table spoon natural cacao
1 tea spoon baking powder
1/2 tea spoon salt
180gr soft butter 
200gr sugar
1 large egg
1/2 almond essence
                                                                                      50gr good grounded almonds
                                                                                      125gr white chocolate broken in large pieces


How to make:

   1.   Mix in averaged sized bowl the flour, cacao, baking powder and salt.
   2 .  In  large bowl mix the butter and the sugar with a mixer on high speed until the mix is white and fluffy.
   3.   Add the egg and the almond essence  and mix with the mixer on slow just for a bit until the ingredients mix together.
   4.   Now with the mixer still set on low add the flour mix and the almonds to the rest of the ingredients.
   5.   You should have a nice dough by now, which you will separate in two balls. Flatten then slightly and wrap them in cooking wrap after that put them in the refrigerator for 30 minutes.
   6.   Preheat a oven to 180C degree or set it on 4 if its a gas one.
   7.   Butter up two shallow baking pans.
   8.   Take out the dough and form it to small ball with 4cm in diameter, then  roll the dough in a wick/fuse like form that should be 30cm long.
   9.   Form every wick/fuse in a pretzel/bretzel form.
   10. Bake for 10-12 minute or until they hard to the touch.
   11. Take out the pretzels and let them cool down for 5 minutes. Then take them out of the baking pans and arrange them on a metal grill to cool down completely.
   12. Take the chocolate and melt the usual way. ( In water bath)
   13. Cover the pretzels with it like in the picture. Let the pretzel cool down for 30 min. This will also allow the chocolate to harden. Under no condition put the pretzel in a refrigerator to cool down! Even if the weather is too hot for the chocolate to harden.


You should get around 22 pretzels.
Time to make: 40 minutes + 1 hour waiting time.

Cookies with pieces of chocolate

Have you ever seen those huge round cookies with pieces of chocolate stuck to them and wondered how they are made? Well there lots of ways to make these kind of cookies. However i am gonna show you one of the best ways to do them .
Ingredients:
525gr flour
1 tea spoon salt
2 tea spoons baking soda
400gr soft butter
600gr brown sugar
200gr sugar
                                                                                    4 big eggs
                                                                                    2 tea spoon vanilla essence
                                                                                    250gr natural or milk chocolate chips

How to make:



  1.  Preheat a oven to 190C, if you use a gas one set it on 5.
  2.   Cover with butter tree shallow baking pans.
  3.   Mix in a big bowl the flour, baking soda and salt.
  4.   In another big bowl put the butter and two kind of sugar, mix with a mixer on high until the mixture is fluffy.
  5.   Add the eggs one by one. Mix every single egg until it blends with the mix. (You add this in the second bowl)
  6.   Set the mixer on slow and slowly add the vanilla essence and the flour mix to the other mix.
  7.   Add the chocolate chips, use a wooden spatula to the mix it with the rest.
  8.   Separate the dough in small golf size balls. And put the balls in the pans. There must be around 7cm distance between each cookie. They expand allot so please do keep them far apart.
  9.   Bake the cookies for 10 minutes or until golden brown.
  10. Take the cookies out of the oven and leave them for 5 minutes to cool.
  11. After the 5 minutes have passed take them out of the pan and let them cool on a metal grill.



You should get around 50 cookies.
Time to make the recipe around 20 min.
Baking 10 minutes.
Difficulty: Very easy.

Lady fingers(Biscotti) "Di Prato" with coffe and hazelnut

    I am gonna write the recipe for the wonderful biscotti "Di Prato" They have very light a fresh taste with a nice coffee fragrance.

Ingredients:
   
    125gr hazelnuts
    300gr flour
    75gr   natural cocoa
    2 teas spoon baking soda
    1/8 tea spoon salt
    3 large eggs
    200gr sugar
    1/2 tea spoon vanilla essence
                                                                                                            2 tea spoon Nescafe
                                                                                                            60gr natural chocolate chips
                                                                                                            260gr white chocolate broken in
                                                                                                                                             large pieces

How to make:

    Preheat the oven to 170C(if it is a gas one set on 3).
    Put the hazelnuts in a shallow baking dish. Bake them for around 7 min until they are lightly brown. Get them out of the baking dish and put them on a large cotton cloth. Cover them with the cloth and start rubbing. This will remove there shell and leave the nut naked. Take only the nut.
    Increase the temperature of the oven to 180C (if it is a gas one set in on 4)
    Spread butter on a shallow baking dish.
    In a average sized bowl mix the flour, baking soda, cacao and salt.Mix them together.
    In a large bowl put the eggs, sugar and vanilla essence mix well with a mixer on high speed until the mix becomes white and fluffy.
   Set the mixer on low speed on gradually add the flour mix, Nescafe, chocolate chips and hazelnuts in the large bowl.
   Stir, until the dough hardens.
   Split the dough in two parts and form a bread like shapes with around 30cm long place them in the baking dish 5cm apart and press them gently to the bottom of the dish so the bottom  of the dough flattens.
   Bake the bread shaped dough for 25-30 minutes or until the dough hardens up to the touch.
   Take out the dough and place it on cutting board for 10 minutes, so they can cool down.
   Lower the temperature of the oven down to 170C
   Cover two shallow baking dishes with baking sheets.
   Cut the now baked and cool down dough into diagonal slices with around 1cm thickness.
   Arrange the slices in the two baking dishes and bake for around 10-15 minutes.
   After you take them out, arrange them on a metal grill and let them cool down completely.

Well this is how you are supposed to make Biscotti "Di Prato". You should  get around 48 pieces.
Preparation time: 35 min+10 min for cooling down.
Baking time: 45 minutes.

Biscuits with oatmeal and pieces of chocolate

Good day today we will make cookies with oatmeal and pieces of chocolate.

Ingredients
:

300gr flour
1 tea spoon baking powder1 tea spoon baking soda 
1/4 tea spoon salt
250gr softened butter
200gr sugar
200gr brown sugar
2 large egg
1 tea spoon vanilla essence
375gr oatmeal
180gr natural chocolate chips

90gr white chocolate chips
                                                         100gr slightly baked walnuts, crushed wholesale

How to make:

   1. Preheat the oven to 180C (if you use gas one set it on 4).
   2. Cover two shallow baking dishes with baking sheet.
   3. Take a average size bowl and mix the flour with the baking powder, baking soda and salt, stir until they mix together.
   4. Put in a large bowl the butter and the two types of sugar and use a mixer on high speed to mix them until the mix is puffy. Add the two eggs one after the other, you must stir a bit after adding each egg until you have
homogenate mixture.
  5. Set the mixer on low and add the vanilla essence, the flour mix that was in the first bow and the oatmeal.
  6. Add the two kind of chocolate and the walnuts to the mix, mix them with a large wooden spatula.
  7. Form from the
dough small balls with the size of golf ball and arrange them in the baking dishes with 7cm apart.
  8. Bake for around 10 minutes or until they become light brown.
  9. Take the biscuits out of the oven and let them cool down for 10 min.
  10. After that take them out from the baking dish and arrange them on a metal  grill to cool down completely.


Well this all you have to do to have wonderful oatmeal biscuits with  chocolate pieces. You should have around 24 cookies. The time you would need to do all the steps is around 20 minutes. Baking time is 10 minutes.Difficulty level is 1.
